This recipe features simple chicken, broccoli, and brown rice, but once you get the hang of meal prepping, you can substitute other veggies and grains that you like. Ingredients
2 cups brown rice
coconut oil
7 chicken breasts
1 juice of 1/2 lemon
4 cloves garlic
3 heads broccoli
1/2 cup greek yogurt
salt and pepper, to taste
Notes
- Cutting the chicken on the diagonal will help you get more even slices since chicken breasts are naturally uneven. You can also pound chicken breasts to get this effect, but it is important to try to get the pieces as even as possible.
- Paprika is a great addition to add a little more flavor to simple chicken marinade/rubs.
