How to Make a Vinaigrette

minutesIt’s time to stop buying salad dressing! Store-bought dressings are filled with sugar and other unnecessary ingredients, and making your own will yield a much fresher, more flavorful dressing. Here, Jacques Pepin shows his recipe and tips for making a basic vinaigrette. You can swap ingredients, using different types of vinegar, using or omitting mustard, shallots, garlic, herbs, etc.
Ingredients
1 minced shallot
1 pinch salt and pepper, to taste
1.5 TB good French mustard (we like Maille)
1/8 cup vinegar (like red wine)
1 splash water
1/2 cup olive oil
Notes
- Combine all your ingredients except oil in a jar and shake well.
- Add the oil at a ratio of 4 parts oil: 1 part vinegar
