How to Grill Chicken Breasts

minutesChicken breasts are a dinner classic, but they are very easy to overcook because they’re so lean.
Ingredients
1/4 cup extra virgin olive oil
2 lemons, finely grated zest and juice
1 TB dried oregano
1 TB minced garlic
2 tsp paprika
1 1/2 tsp salt
1/2 tsp black pepper
6 boneless skinless chicken breasts
Notes
- We recommend pounding your chicken with a meat tenderizer before marinating it so that you get it to an even thickness for cooking. A lot of chicken breasts are very uneven, and you will end up with one part overcooked if you skip this step.
- Chicken breasts should be cooked over medium heat for 8-12 minutes depending on size. A meat thermometer is helpful here to know your chicken is cooked to 165 without having to cut into it.
- Place the chicken smooth side down to start! This will ensure you get the great grill marks on it, and it is less likely to stick.
- Let chicken rest for 10 minutes after cooking! This will ensure the juices redistribute to give you the juiciest possible chicken.
