Chicken breasts are a dinner classic, but they are very easy to overcook because they’re so lean.


  • 1/4 cup extra virgin olive oil

  • 2 lemons, finely grated zest and juice

  • 1 TB dried oregano

  • 1 TB minced garlic

  • 2 tsp paprika

  • 1 1/2 tsp salt

  • 1/2 tsp black pepper

  • 6 boneless skinless chicken breasts


  • We recommend pounding your chicken with a meat tenderizer before marinating it so that you get it to an even thickness for cooking. A lot of chicken breasts are very uneven, and you will end up with one part overcooked if you skip this step.
  • Chicken breasts should be cooked over medium heat for 8-12 minutes depending on size. A meat thermometer is helpful here to know your chicken is cooked to 165 without having to cut into it.
  • Place the chicken smooth side down to start! This will ensure you get the great grill marks on it, and it is less likely to stick.
  • Let chicken rest for 10 minutes after cooking! This will ensure the juices redistribute to give you the juiciest possible chicken.
