Deglazing a pan is one of those simple, easy techniques that everyone should know. Deglazing a pan after cooking meat allows you to release all the stuck on bits of meats and veggies (fond), which is then usually used to make a pan sauce.   • You can use wine or stock to deglaze your pan. Pour your liquid of choice into the pan so the entire bottom of the pan is filled.
  • Use a wooden spoon to loosen up the brown bits that are stuck to the pan, stirring the liquid.
