Braising meat is a great way to make it tender and juicy, particularly when you’re working with tougher cuts of meat. Being familiar how to braise also really makes you sound like you know what the hell you’re doing in the kitchen. This Food Network video gives a great overview of braising. Notes

  • This recipe uses a brown braise, meaning you first sear the meat and brown the vegetables before adding the liquid.
  • Deglazing the pan with wine after searing/browning is an important step!
  • Add stock or water about halfway up the meat, add your aromatics, and simmer on the stovetop or in a 350 oven 1.5 to 3 hours (depending on cut). The meat is done when it’s fork tender.
